I love spaghetti squash. It's easy to prepare, filling, and a great low carbohydrate substitute for your favorite pasta dishes. Not to mention, it does not give you that after-pasta-bloat feeling! I cook this often and like to add pesto and chicken or fresh tomato sauce, basil, and Italian sausage.

First, cut stem off and slice lengthwise.

Next, scrape out seeds with a fork.

Then, place face down on a sheet pan.

Bake for 45 minutes on 400 degrees.

When you take a fork and scrape out the middle, it will create strands that look like spaghetti.

Leslie's Dietitian Kitchen Tip: For a simple side, just add butter and fresh grated Parmesan cheese. Yum!
