Roasted Garlic Hummus

What You'll Need: 

 

Garlic Heads, 4 whole

Olive oil, 1/2 cup

Tahini (ground sesame seed), about 3 T

Chickpeas, 2- 15 oz cans

Navy Beans, 1- 15 oz can

Salt to taste

Parsley for garnish

 

To Create:

 

Cut tops off of garlic heads. Place on aluminum foil and drizzle with olive oil as shown below. Connect the edges of the aluminum foil and wrap up the garlic cloves. Place on cookie sheet and roast for about 40 minutes on 400 degrees. Your house will soon smell like you are in Italy. 

While you are taking in the aroma, get out your food processor. (I've tried to do this in a blender but just doesn't work as well.) Add chickpeas and navy beans- mix. Add tahini next- mix. When garlic is done, it should come out like a paste by squeezing each head together face down. Add olive oil-mix. Add olive oil until you reach desired consistency. If you've had store bought hummus, you'll know what I mean. Add salt to taste.
