What you'll need for 12- 1/2 cup servings:
Red skinned potatoes, 2 lbs.
Kale, 1 bunch
Onion, yellow, 1 medium
Green onion, chopped, 1/2 cup
Greek yogurt, 1/4 cup
Sour cream, 1/2 cup
Butter, 1 T
Garlic powder, 1 T
Dijon mustard, 1 T
Salt & Pepper to taste
To Create:
Boil potatoes. Usually takes about 30 minutes (if the fork will easily pierce the potato, they are done). Dump potatoes in colander and rinse with cold water to help stop the cooking process. Set potatoes aside. Chop kale and onion. Saute kale and onion with butter in a skillet over medium heat for about 10 minutes. Set aside. When potatoes are cool, dice and set aside. In a large mixing bowl, place sour cream, Greek yogurt, green onion, and spices into large mixing bowl. Add the potatoes, kale, and onion, and fold all ingredients together. They key here is folding, not mashing. Garnish with fresh kale. Refrigerate or serve warm.
